Kielbasa is the name of a recipe I got from a friend right before I got married. This recipe can contain sausage but you can really put into it whatever you want! The beauty of this recipe is that it takes almost no time to prepare, the oven does the work, it's filling and you can use whatever ingredients you happen to have on hand.
Original Kielbasa Recipe
In a 9x13 baking dish line with foil, cut up smoked sausage and chicken breasts, onion, white and/or sweet potatoes, carrots, squash and bell pepper. Sprinkle with Emeril (original essence) seasoning, salt, pepper, parsley and garlic powder. Wrap foil over the top of the pan, dab with about 6 slices of butter. Cook on 450 for 1 hour.
You can add zucchini, celery or any other vegetable like this. Use some or all of the ingredients mentioned above. The key is the Emeril seasoning. You can use whatever seasoning you want, but this seasoning goes well with both meats. To make it less fattening you can use Turkey sausage, only sweet potatoes and less butter. If you put a little bit of water in the bottom it will have the same effect as the butter - keeping the food soft and not dried out. If you don't like cooking with foil you can simply put it in a baking pan with a lid and a little bit more water.
